At the end of last year, I found out I had a gluten intolerance. For the most part, my diet was such that it didn’t change too much about what I eat, which is good. However, I completely stressed out about my usual holiday gift giving.
Typically, the holidays is a time I spend making yummy treats for my family. This year, though, I realized I couldn’t taste any of my go-to cookies because of the flour, so I decided I was going to go with gluten free treats for everyone – because really, gluten is toxic, and what better way to say I love you than by giving good for you treats…right? At least that was my thinking.
I decided to revamp all the usual recipes for gluten-free. I also wanted to have a tried and true recipe that someone else had found or developed and therefore was probably pretty decent.
What I found was this Gluten-free and Vegan Oatmeal Chocolate Chip Cookie:
This recipe was originally found on The Gluten Free Vegan site. Megan has some other cookie recipes that look pretty decadent. The next one I think I’m going to try will be the Chocolate Mess Cookie which also happens to be no bake.
